HACCP FOOD SAFETY MANAGEMENT SYSTEM

Food safety has been a major concern in the food industry in the recent years. When managing the food preparation process, it cannot be left to chance. Hazard Analysis and Critical Control Points (HACCP), an internationally recognised specification, provides a systematic preventive approach to food safety and it addresses physical, chemical, and biological hazards at all stages of the production process and supply chain. HACCP is used to identify potential food safety hazards, so that key actions, known as Critical Control Points (CCP's) can be taken to reduce or eliminate the risk of the hazards. ISO 22000 FOOD SAFETY MANAGEMENT SYSTEM

This standard is useful for more established food establishments seeking international recognition of the Food Safety practices. The specifications are similar with the SAC-HACCP standard and it is more elaborate. The ISO 22000, an international standard, is an auditable standard that integrates the seven principles of the Hazard Analysis and Critical Control Points (HACCP) system and application steps developed by the CODEX Alimentarius Commission. The ISO 22000 specifies the requirements for a Food Safety Management System that includes interactive communication, system management, prerequisite programmes and HACCP principles. It is applicable to all parties in the food chain.
